Each spring, we harvest, boil, and bottle maple syrup daily, capturing the evolving character of the sap as the land wakes from winter. Our trees grow just behind our home, nourished by limestone and marble filtered waters from the hills above the Housatonic River. This flavor is our way of sharing the rhythm of the season — one spoonful at a time.

Our syrup reflects each stage of the season:
Amber Rich – Light, buttery, with hints of vanilla. Early season’s whisper.
Dark Robust – Caramel-forward and warm, when the sap is flowing strong.
Very Dark Robust – Rare, bold, and intensely roasted. Known here as “da’ bomb.”
Each is classified using the universal Grade A system but carries the unmistakable flavor of our land.
