From sap to bottle, every step of this House of Tonic maple syrup happens close to home. We tap local maples in the hills surrounding Falls Village, then reduce the sap slowly over an open wood fire — an old-world method that draws out richer flavor and deep amber color.

Pure, Small-Batch Craftsmanship

Produced in micro batches, this syrup is entirely wood-fired, never blended, and always poured by hand. The slow burn of local hardwood infuses subtle notes of smoke and caramel, giving each harvest its own distinct character.

A Limited Taste of the Season

Only a few gallons are produced each year. Once this batch is gone, the flavor — shaped by this year’s trees, weather, and firewood — won’t come again. Enjoy it over pancakes, ice cream, or simply by the spoonful.

Flight I — Early Season

Light. Clean. The first movement of sap.

These early batches are lighter in body with quick finishes and delicate notes of vanilla, fresh sugar, honey, and caramel.

Batch #2601 — Clean & Balanced
Vanilla, light caramel, and a clean finish.
→ The most approachable batch in the flight.

Batch #2602 — Barely-There & Silky
Fresh sugar and soft sweetness with a quick finish.
→ For those who prefer the lightest touch of maple.

Batch #2603 — Floral & Delicate
Bright, clean, and lightly floral with subtle vanilla notes.
→ Quiet and understated.

Batch #2604 — Caramel & Slightly Bold
Caramel and fresh sugar with a slightly toasted edge.
→ Early season with more depth and presence.

Flight II — Mid Season

Balanced. Warm. Developing structure.

As the season progresses, the syrup deepens. Texture becomes more present, flavors linger longer, and notes of toasted sugar, spice, and warmth begin to emerge.

Batch #2605 — Soft Spice & Honeyed
Light spice with a honeyed sweetness and silky texture.
→ A gentle transition into mid-season.

Batch #2606 — Toasted & Indulgent
Toasted sugar and caramelised depth with a coating, lingering finish.
→ The richest and most satisfying batch in this flight.

Batch #2607 — Spiced & Structured
Warm spice layered with honeyed depth and a smooth, rounded body.
→ Complex, balanced, and highly favored in tasting.
Often the most unexpected favorite.

Batch #2608 — Soft & Subtle Warmth
Honeyed and lightly toasted with a soft, delicate finish.
→ A quieter, more understated expression of mid-season.

Flight III — Late Season

Most selected in tasting: Batch #2609 (with #2607 also frequently chosen overall)

Dense. Mineral. The end of the cycle.

At the end of the season, the syrup becomes deeper, heavier, and more complex. Flavors concentrate into burnt sugar, molasses, smoke, and mineral notes, with long, warming finishes that stay on the palate.

Our Harvest Ritual

Each spring, we harvest, boil, and bottle maple syrup daily, capturing the evolving character of the sap as the land wakes from winter. Our trees grow just behind our home, nourished by limestone and marble filtered waters from the hills above the Housatonic River. This flavor is our way of sharing the rhythm of the season — one spoonful at a time.

Amber Rich to Very Dark Robust

Our syrup reflects each stage of the season:


Amber Rich – Light, buttery, with hints of vanilla. Early season’s whisper.

Dark Robust – Caramel-forward and warm, when the sap is flowing strong.

Very Dark Robust – Rare, bold, and intensely roasted. Known here as “da’ bomb.”

Each is classified using the universal Grade A system but carries the unmistakable flavor of our land.
